Two for one recipe for you. Who doesn’t love breakfast?
Here are some quick breakfast recipes that are super easy to make and could easily be served in a local hipster hangout. Avocado Toast is so simple and tasty – I’ll share a tip to take it next level. Green Chili Tacos are easy and a great grab-and-go option too!! Let’s get to it…

Avocado Toast

* Avocado
* Egg
* Sourdough bread slice
* Balsamic glaze
* Salt & pepper (to taste)
* Butter
* Oil for cooking
Green Chili Breakfast Taco

* Avocado
* Egg
* Flour tortilla (taco size)
* Cheese
* Green Chili Salsa (see photo below)
* Salt & pepper (to taste)
* Butter
* Oil for cooking
Equipment:

Frying pan (egg pan if you got one)
wooden spatula
small mixing bowl
Instructions: Avo Toast

1.) Begin to heat frying pan on med-high heat.
2.) Cut open avocado, pit and scoop out with a spoon into mixing bowl. Add a pinch of salt and mash with a fork. Mash until medium to small chucks remain.
3.) Toast sourdough slice. (I use an Asiago Sourdough to kick it a notch). While that is happening, start frying egg. Add some oil and a small pat of butter to pan. Fry egg to your liking – hint: over medium is best.
4.) When toast pops up, butter the bread a bit and spread mashed avocado. Top with fried egg. Drizzle balsamic glaze. Boom – done!


Pro tip: try sprinkling some roasted sesame seeds and seaweed also known as Furikake on top – next level right there.
Instructions: Green Chili Breakfast Taco

1.) Begin to heat frying pan on med-high heat.
2.) Heat / slightly brown tortilla in pan. A small, small amount of oil can help the process. Set aside
3.) Cut avocado, pit and scoop into bowl. Add a pinch of salt and mash with a fork. Small to medium chucks are desired.
4.) Crack egg into bowl and add 1-2 tsp of water. Scramble. Pro-tip, the water will steam and fluff the eggs… Add a pinch of salt and pepper. Oil and butter pan, add egg and scramble with wooden spatula. Remove from heat.
5.) Assemble taco in this order: tortilla, avocado, egg, green salsa, cheese. Fold. Smash into your mouth. Enjoy!

Weekday: Orange juice or berry smoothie
Weekend: Mimosa – preferably 2
